The name says it all! It's a melt in mouth cookie equally loved by kids and grown ups :)
I love to bake these cookies as it is a one bowl recipe! Less ingredients, easy and fast to make and am sure you will make these cookies again and again as it will be in demand. This recipe uses oil instead of butter and it is eggless!

This is a perfect little holiday treat and I hope you enjoy :)























Ingredients
All purpose flour/ Maida - 2 cup
Powdered sugar - 1 1/2 cup
Baking Powder - 1/2 tsp
Oil-3/4 cup
Salt-a pinch


Method
1. In a wide bowl add flour/ maida, powdered sugar, baking powder and salt and mix well.
2. Add oil little by little to the above mixture until you get a soft dough. (sometime you may need to add a little over 3/4 oil)
3. Roll in hands to a small lemon size shape.
4. Transfer it to a parchment paper /Baking sheet
4. Bake at 180 degrees for about 15-18 minutes until you get a very light brown color.
5. Cool it on a wired rack and dust it with confectioner's sugar.

Note: Let them cool completely before you store in air tight containers.

Every Keralites all time favorite snack I believe. Of course! its my most favorite. You will get to see this in every hotels/restaurants in Kerala.I used to eat this mostly every day over a cup of evening tea, and will end up eating 3 or 4! Still remember the fights with siblings over pazhampori :)

This is a super easy snack everyone can prepare at home with very few ingredients, ripe plantain / banana being the key player! Must say I miss this where I reside now as these plantains are not readily. So this is one of the 'must have' in my suitcase while travelling back from Kerala.  sighhh!!

Ok! enough of drama. Here you go!


Pazham Pori/Banana Fritters recipe
Preparation time -15 minutes
Cooking time      -15 minutes

You will need:

Ethappazham/ Ripe Plantain -1
All Purpose flour/Maida       - 1 cup
Sugar                                     - 1tsp or according to your sweet level
Salt                                        - a pinch
Turmeric Powder                  - a pinch (optional - this is to get the yellow color for the Pazham Pori)
Water                                    - 3/4 cup (approximately)
Coconut oil/Sunflower oil/Corn oil - (Coconut oil being the best and traditional way)


How you do:
1. Take flour in a wide bowl and add sugar and salt (you can add pinch of baking powder here but its optional) and give a quick mix.
2. Add water gradually to this mix until you get a thin batter, but not so watery (little more thinner than dosa batter without any lumps (if you know dosa batter) )
3. Add turmeric powder (this step is optional)
4. Heat oil in a deep frying pan or kadai.
5. Meanwhile cut the ethappazham or ripe plantain into half and cut it again in 2-3 thin slices vertically.
6, Dip these in the batter.
7.When the oil is hot (not super hot) add the banana slices one by one and fry on both sides until it turns golden brown.
8. Remove from oil and place it on a kitchen napkin to drain oil.
9. Serve with hot tea

Its best served when it is hot otherwise it will be soft, But I bet, you are gonna love it however Pazham Pori comes infront of you :P
